TRY THIS AT HOME

Conch Fritters

½ pound cooked and finely diced conch

½ pound all-purpose flour

1 tablespoon baking powder

1 ounce chopped onion

½ ounce chopped scallion

1 ounce chopped bell peppers   (green or red)

3 eggs

½ cup milk

Mix all ingredients - shape into small balls and fry in 250 F vegetable oil until golden brown; makes four servings.

Warm Johnny Cake - "We meckin' Johnny Cake me' chile!

• 4 cups sifted flour
• 2 tsp baking powder
• 1 1/2 oz margarine
• 1 pinch of salt
• Water
• Vegetable oil for frying

Sift the dry ingredients in a mixing bowl. Run in margarine, then add water slowly to make a stiff but pliable dough. Knead on a floured board. Cut dough into desired sizes and roll into circles 1/2 thick. Gently pierce the entire surface of the flattened dough with a fork and then deep fry slowly in hot oil until golden brown.
